Tossing together a weeknight meal is often a whirlwind that leaves behind more mess and commotion than happy memories. But every mouth I feed loves this one-pot Basil Chicken and Pasta Toss, which means less food being tossed from the high chair to the floor. Fewer leftovers need to be tossed after having been forgotten in the fridge for two weeks. And I feel less like my kitchen has been tossed when it comes time to clean up.

In fact, this is one toss that makes meal prep faster and life much easier. Chop a few veggies, simmer a sauce, cook some pasta, and toss! Basil Chicken and Pasta Toss

Basil Chicken and Pasta Toss is a fast and family-friendly meal. You won't believe how easy it is to toss together!

Ingredients
  • 6 oz fusilli or fettuccine
  • 1 large carrot, cut into 1 inch strips
  • 2 c broccoli flowerets
  • 1 T butter or margarine
  • 2 T cornstarch
  • 1 1/2 c skim milk
  • 3/4 t dried basil crushed
  • 1/2 t instant chicken bouillon granules
  • 2 c cooked chicken or turkey, chunked or shredded
  • 1 T lemon juice
  • 1/4 c grated Parmesan cheese
  • 1 T snipped parsley
Instructions
  1. In a large saucepan, cook pasta and carrots in boiling water for 5 minutes. Add broccoli and cook for another 5 minutes or until tender. Then drain and keep warm.

  2. For sauce, in a medium saucepan, melt butter. Blend in cornstarch. Stir in milk, basil, chicken bouillon granules and 1/4 t pepper. Cook and stir until thickened. 

  3. Stir in chicken and heat through. Remove from heat. Stir in lemon juice. Spoon sauce over pasta. Now toss!

  4. Sprinkle with Parmesan cheese and parsley. Serve.
