I’ve never bothered to attempt making a Coffee cake. One reason is that there are some really great pre-packaged coffee cakes out there already. Also, If I’m going to spend the time to make a cake, I’m not going to waste it on a breakfast. I’m going to make it for dessert as a reward for getting through my day. If the food highlight of my day is gone by 7 a.m. along with my coffee, the drink highlight, then what is the point of going on? Evening dessert is like a beacon telling me that it will all be worth it. But then, I found this recipe for Granny’s Apple Cinnamon Coffee Cake.
I made this Apple Cinnamon Coffee Cake initially when we were having company for the weekend. And now, I cannot stop making it. It takes almost no time to whip together and I usually have all of the ingredients on hand. Once I made it for the first time, I realized there’s is nothing preventing me from having a piece with my morning coffee, and another before bed. It’s actually a perfect evening dessert because, as cakes go, it is pretty light with its hint of lemon.
This apple cinnamon coffee cake is, surprise surprise, another spin-off from Mema’s Lighting Cake recipe. That recipe truly is the gift that keeps on giving. It has so far given us Pineapple Upside Down Cake and Cake Pops and maybe even more to come.
So bookend your day with this zesty apple cinnamon treat. A long day of early wake-ups, running after kids, no naps, picky eating and a wild dog is always a little easier knowing there is a reward at the end. But who’s to say that getting up and at ’em isn’t a cake-worthy feat in and of itself!? This is the perfect desserty reward for all of your little daily milestones.
This Apple Cinnamon Coffee Cake is so incredibly easy to make and you probably already have everything you need to make it! It is light enough for breakfast with your coffee, but decadent enough for a dessert in the evening. Once you make this once, you'll be making it all the time!
- 1 1/2 c flour
- 1 c sugar
- 3 t baking powder
- 1/4 c vegetable oil or butter
- 2 eggs
- splash milk
- 1 t vanilla
- 1 zest of lemon
- 1 apple, peeled and coarsely chopped I used Granny Smith
- 1/4 c brown sugar you may need less
- 3 T cinnamon you may need less
Preheat oven to 350.
Sift together flour, sugar and baking powder. Into a measuring cup, add oil and eggs. Fill the cup to 7/8 c full with milk.
Pour wet ingredients into a well in the dry ingredients. Add vanilla and beat until well mixed.
Add grated lemon zest (approximately 1 lemon) and apple into batter.
Pour into baking dish (8" square). Sprinkle brown sugar and cinnamon on top until lightly covered. Bake 30-35 minutes
