Chicken Satay with Spicy Peanut Sauce – Come for the Peanut Butter. Stay for the Satay.

This could be the best chicken satay I’ve ever had. Why? Peanut butter sauce. Peanut butter is like that friend who always shows up. You know, the type of friend who you can go without seeing for months, and when you finally do get together, its like not a moment has passed. You don’t have to apologize that life has gotten busy and you haven’t called. And like that old reliable friend, you can ignore peanut butter in your cabinet for a while, but it’s always there waiting for you, like it owes you a favor (or flavor, if I may).

Spicy Peanut Sauce for Chicken Satay


I put peanut butter sandwiches in my son’s lunch box several times a week, and I can count on them actually getting into his little body. I put peanut butter on my banana when I need a piece of fruit to turn into a quick breakfast. I dip pretzels in it after dinner when we are somehow out of chocolate. Oh, that’s right, I also dip stuff in it when we do have chocolate. Peanut butter always shows up, sometimes saves the day, and never disappoints in this house.

I don’t usually imagine peanut butter showing up and saving my poultry, but that’s what it does in this case. This meal has a lot of ingredients, which can be a total turn off and an automatic “no” when I’m trying to get dinner on the table. But other than a little measuring and mixing, this meal requires very little effort and only cooks for 10 minutes. The marinade and sauce are nutty, sweet, and slightly spicy, and you can increase or decrease the intensity of each taste element to your liking. You can put this chicken over rice, in a salad, or with noodles. I added a couple veggies and put it in a bowl with some rice. It really was a perfect meal.


This is a meal that is so good that you can make it for your real life human friends, who actually do show up when you finally get together and can pick up where you left off. They will be impressed what peanut butter can do to poultry, and they will never know how little time and effort you put into this delicious dinner!

Ingredients
  • 1 1/25 lbs boneless, skinless chicken breasts
  • 2 T sesame oil
  • 2 T olive oil
  • 1/4 c dry sherry I used red wine that was already open
  • 1/4 c soy sauce
  • 1/4 t pepper
  • 2 T lemon juice
  • 1 1/2 t minced ginger
  • 1/4 t salt
  • 1 dash tabasco sauce or to taste
Satay Sauce Ingredients
  • 4 t corn oil I used olive oil
  • 2 t sesame oil
  • 1/2 c minced red onion
  • 2 T minced ginger
  • 1 T red wine vinegar
  • 1 T brown sugar
  • 1/3 c peanut butter smooth or chunky
  • 1/2 t ground coriander
  • 3 T ketchup
  • 3 T soy sauce
  • 1 T lime or lemon juice
  • 1/2 t pepper
  • 1 dash tabasco sauce or to taste
Instructions
  1. Cut chicken into strips 1/2 inch wide by 3 inches long. Combine remaining ingredients. Allow chicken to marinate in the mixture in the refrigerator for 1-12 hours.

  2. Heat corn oil and sesame oils in a small saucepan. Add onion, garlic, ginger and sauté over medium heat until softened. Add vinegar and sugar, and continue to cook and stir until sugar dissolves. Remove from heat and stir in remaining ingredients (or combine in a food processor for a completely smooth sauce). Adjust seasonings to taste.

  3. Preheat oven to 375. Thread each piece of chicken onto a wooden skewer or toothpick and arrange on baking sheets. Bake for 5 to 10 minutes or until just cooked. Serve hot with a bowl of room temperature sauce for dipping.

Recipe Notes

You can also substitute beef, lamb, shrimp, pork, or scallops for the chicken.
