Broiled Sandwiches – A Sandwich for Everyone on Your Team

Does anyone else live with a football crazed, Patriots/Tom Brady super-fan who loves Super Bowl snacks, but is also trying to be health conscious? I can’t be the only one…ok maybe the part about being a Patriots super fan isn’t universal, but the rest might just ring true.

As Tom Brady and the gang draw closer to the end of the season and to the big game, I found myself wondering what Granny would have served a crew of hungry football fans. She loved entertaining and planning a menu, but would be Super Bowl really have been her cup of tea (or pint of beer, to be more thematically appropriate)?

Imagine my surprise when I found these little sandwiches while shuffling through the appetizer category of her recipe box. While the recipe card is uncharacteristically vague and unspecified, I loved the sound of little broiled sandwiches. Her recipe called only for cheese, peppers, onions and bacon. But with a larger crowd coming for the big game, my brother being a long-term houseguest and my sticking-to-his-healthy-resolution husband, I thought it would be fun to make a whole line-up of these little guys.

Of course Granny’s original recipe was a must, but I wondered what are some other combos that would work? I settled on a roster that included a veggie version with my vegetarian, pregnant sister-in-law in mind. A sweet potato version for the toddlers in my life, and a meat lover’s version for those with more of a lineman appetite (i.e. my extended houseguest brother).

Within these categories I made a few variations which I will break down further below in the Recipe Card.
With each sandwich there was some prep I had to do before broiling. I sautéed the peppers and onions together. I also sautéed the mushrooms separately. I boiled and mashed the sweet potato, and I cooked the bacon. I also lightly fried the egg enough to hold its shape so it wouldn’t run all over the sheet pan. Once I had all of the sandwiches assembled, I broiled on high for about 4 minutes. I did have to take the sandwich with marshmallows out after about 2 minutes, but the rest were closer to 4.

Nice and Broiled
Although the version with marshmallows wasn’t pretty enough for a picture, it was very tasty. Altogether, I made 12 sandwiches that were devoured quickly between my 3 football loving sandwich testers. While all of the sandwiches were playoff worthy, the true MVPs of the group were the sandwich topped with a fried egg and the meat lover’s versions.

I’ll definitely be making these combos for our company during the big game. Since making these sandwiches  last weekend, I’ve thought of several other versions I want to try out: Mexican, ham, egg & cheese, and cheeseburger to name a few.

Broiled Sandwiches

Ingredients: 
  • I used brioche rolls and french bread as the base for these sandwiches
  • Veggie (Use any combination of the following)
    • Peppers
    • Onions
    • Mushrooms
    • Spinach
    • Cheese
    • Fried Egg
  • Sweet Potato (Any combination)
    • Sweet Potato
    • Banana
    • Cinnamon Sugar
    • Honey
    • Marshmallows
    • Raisins
  • Meat Lover’s
    • Roast Beef
    • Bacon
    • Sausage
    • Cheese
    • Peppers
    • Onions
    • Mushrooms
    • Sausage
    • Mustard

Instructions:

  • Prepare any toppings that need to be pre-cooked
  • On a sheet pan, arrange sandwiches and toppings (I left off the mustard and honey drizzles until after the sandwiches were broiled)
  • Broil on high for 4 minutes (check after 2 minutes for certain toppings such as marshmallows)
  • Add drizzle after the sandwiches are broiled (mustard or honey)
